Ingredients

  • large garlic clove coarsely chopped
  • 0.5 cup green onions chopped ( 2)
  •  optional: lemon cut in half
  • tablespoon juice of lemon fresh
  • tablespoons mint plus 4 sprigs fresh whole packed chopped ()
  • tablespoons olive oil extra-virgin
  • teaspoons oregano dried
  • pound bass fillets whole bone in cleaned

Equipment

Directions

  1. Arrange rack 6 inches below broiler. Preheatbroiler. Line rimmed baking sheet with foil.
  2. Cut 1 lemon half into slices.
  3. Cut other halfinto wedges.
  4. Place fish on foil.
  5. Sprinkle insideand out with salt and pepper. Blend olive oil,onions, chopped mint, lemon juice, oregano,and garlic in mini processor until coarsepuree forms. Season sauce with salt andpepper. Reserve 3 tablespoons sauce.
  6. Spreadremaining sauce inside cavity and over fish,rubbing into cuts in flesh.
  7. Place lemon slicesand mint sprigs in cavity.
  8. Broil fish until cooked through and skinis crisp, about 5 minutes per side.
  9. Serve fishwith lemon wedges and reserved sauce.
