  • tablespoons chives finely chopped
  • pound mushrooms wild mixed fresh trimmed
  • teaspoon garlic minced
  • tablespoons parsley finely chopped
  • servings accompaniments: flaky sea salt; lemon wedges 
  • tablespoon shallots minced
  • tablespoon tarragon finely chopped
  • stick butter unsalted melted

Directions

  1. Preheat oven to 450°F with rack in middle.
  2. Lightly brush 4 (12-inch) squares of parchment paper with some of butter.
  3. Toss mushrooms with herbs, shallot, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl, then toss with remaining butter and divide among parchment squares.
  4. Fold parchment to enclose mushrooms.
  5. Bake packets in a shallow baking pan 20 minutes.
  6. Serve packets on plates.
