  • 1.5 cups processed cheese food shredded
  • 10 ounce vegetables mixed frozen
  • 0.5 cup lentils dry
  • cup milk 
  • 14.5 ounce vegetable broth canned
  • cups water 
  • ounce rice wild uncooked

Directions

  1. Rinse and sort lentils, discarding any debris or blemished lentils.
  2. Combine lentils and water in a medium saucepan. Bring to a boil; cover, reduce heat to low and simmer for 5 minutes.
  3. Let stand for 1 hour, covered.
  4. Drain and rinse lentils.
  5. Using a medium saucepan cook rice according to package directions.
  6. In a medium stock pot add lentils, cooked rice, vegetable broth, frozen mixed vegetables, milk and American cheese. Bring to a boil; reduce heat to low and simmer, uncovered for 20 minutes.
  7. Garnish as desired.
