Ingredients

  • tablespoons apple cider 
  • 1.3 cups purée of usa bartlett pear diced cored peeled ( 2 pears)
  • tablespoons cider vinegar 
  • tablespoons sesame oil dark
  • 0.5 teaspoon rubbed sage dried
  •  garlic clove minced
  • 0.3 cup green onions sliced
  • 0.5 teaspoon juice of lemon fresh
  • tablespoon orange juice concentrate thawed
  • teaspoon salt 
  • tablespoon sesame seed toasted
  • cup sweet potatoes and into diced peeled
  • cups water 
  • cup rice wild uncooked
  • cup bell pepper diced yellow ( 1 pepper)

Directions

  1. To prepare the salad, bring water to a boil in a medium saucepan.
  2. Add wild rice; cover, reduce heat, and simmer 1 hour or until tender. Set aside.
  3. Cook diced sweet potato in boiling water for 5 minutes or until tender.
  4. Drain and rinse with cold water; drain well. Set aside.
  5. Combine pear and lemon juice in a large bowl, and toss to coat.
  6. Add the cooked wild rice, sweet potato, bell pepper, green onions, sesame seeds, and salt; toss well.
  7. To prepare the vinaigrette, combine vinegar and remaining ingredients; stir well with a whisk.
  8. Pour over rice mixture, tossing to coat.
