Ingredients

  • 200 green beans thick halved cut in 2
  • small head cabbage shredded white
  • small onion diced white
  • large carrots shredded
  • tbsp unrefined sunflower oil 
  • tbsp apple cider vinegar 
  • tbsp sugar 
  • tsp celery seed 
  • tbsp coarse mustard

Directions

  1. Cook the green beans for 1 min in boiling salted water, then drain and rinse under a cold tap.
  2. Place in a large bowl with the cabbage, onion and carrot.
  3. In a small saucepan, bring the dressing ingredients to the boil.
  4. Add a pinch of salt, remove from the heat, let cool for 5 mins, then toss with the salad before serving.
