  • 0.8 cup balsamic vinegar 
  • tablespoons brown sugar 
  • 0.3 cup ginger fresh grated peeled
  •  garlic cloves minced
  • 0.5 cup green onions thinly sliced
  • tablespoon ground cumin 
  • teaspoon ground turmeric 
  • tablespoon jalapeno minced seeded
  • teaspoon kosher salt 
  • 1.5 tablespoons olive oil 
  • teaspoons paprika 
  • tablespoon freshly cracked pepper black
  • medium tomatoes yellow cut into 6 wedges ( 2 1/2 pounds)

Directions

  1. Combine first 3 ingredients in a large bowl.
  2. Heat oil in a large saucepan over medium-high heat.
  3. Add ginger and next 5 ingredients (ginger through garlic); saut 1 minute.
  4. Add vinegar, sugar, and salt to pan, stirring to combine. Bring to a boil; cook 1 minute, stirring frequently.
  5. Pour spice mixture over tomato mixture; toss gently to coat.
  6. Serve at room temperature.
