Ingredients

  • 15 ounce black beans rinsed drained canned
  • tablespoons cilantro leaves fresh minced
  •  garlic cloves minced
  • 1.5 cups grape tomatoes halved
  • cup rice instant uncooked
  •  jalapeno minced seeded
  •  lime cut into wedges
  • tablespoon olive oil divided
  • cup onion finely chopped ( 1)
  • 0.5 teaspoon salt 
  • cup water

Directions

  1. Cook rice in 1 cup water according to package directions, omitting salt and fat.
  2. Heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat.
  3. Add onion; saut 3 minutes.
  4. Add jalapeo pepper and garlic; saut 1 minute.
  5. Add beans, tomatoes, and salt. Cover, reduce heat, and simmer 5 minutes.
  6. Remove from heat. Stir in remaining oil.
  7. Serve over rice, and top with cilantro and lime wedges.
