  • 0.3 cup cilantro leaves fresh chopped
  •  garlic clove thinly sliced
  •  jalapeno thinly sliced
  • 0.3 cup juice of lime fresh
  • cups chicken broth 
  • 1.5 tablespoons olive oil 
  • 0.8 cup orzo pasta (rice-shaped
  • 0.8 pound chicken breast boneless skinless cut into matchstick-size strips
  • large tomatoes seeded chopped
  • medium onion white thinly sliced

Directions

  1. Cook orzo in pot of boiling salted water until just tender.
  2. Drain well.
  3. Heat oil in large saucepan over medium heat.
  4. Add onion, garlic, and chiles. Sauté until onion begins to brown, about 4 minutes.
  5. Add chicken; sauté 1 minute.
  6. Add broth, lime juice, and tomato. Simmer until chicken is cooked through, about 3 minutes.
