  • teaspoons blackening seasoning 
  • 14.5 ounce canned tomatoes diced with roasted garlic, drained canned
  • ounces fettuccine barilla uncooked
  • tablespoons juice of lemon 
  • teaspoons olive oil 
  • 0.3 teaspoon pepper 
  • 0.8 pound shrimp fresh deveined peeled

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, coat a large nonstick skillet with cooking spray, and add oil.
  3. Place over medium-high heat until hot.
  4. Sprinkle blackening seasoning evenly over shrimp.
  5. Add shrimp to skillet; cook 2 minutes on each side or until shrimp turn pink. Stir in lemon juice.
  6. Add tomatoes and pepper; cook until thoroughly heated.
  7. Spoon shrimp mixture over drained pasta, and serve immediately.
