Ingredients

  • 500 ml vegetable stock 
  • 250 rice 
  • 100 pomegranate seeds 
  • tsp coriander seeds crushed
  • tsp ground cumin 
  • 50 almonds flaked toasted
  •  orange zest

    1. Bring the stock and rice to the boil, then simmer for 10 mins.
    2. Drain the rice and set aside to rest for 5 mins.
    3. Add the pomegranate, coriander seeds, cumin, most of the toasted almonds, orange zest and seasoning.
    4. Sprinkle with the remaining toasted almonds.
