Ingredients

  •  eggs slightly beaten
  • cups zucchini shredded (1 large or 2 small)
  • 0.3 cup breadcrumbs plain
  • 0.3 cup onion chopped
  • teaspoon salt 
  • 0.5 teaspoon oregano dried
  • 0.3 teaspoon pepper 
  • 1.5 lb ground beef 80% lean (at least )
  • tablespoon brown sugar packed
  • tablespoons catsup 
  • 0.5 teaspoon mustard yellow

Directions

  1. Heat oven to 350°F. In large bowl, mix all meatloaf ingredients until well blended. Press mixture into ungreased 9 1/2-inch deep-dish glass pie plate.
  2. Bake 35 minutes.
  3. Meanwhile, in small bowl, mix all topping ingredients.
  4. Remove meatloaf from oven; pour off drippings.
  5. Spread topping over loaf. Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center and meat thermometer reads 160°F.
  6. Let stand 5 minutes before serving.
