Ingredients

  • teaspoon chili powder 
  • 0.5 cup whole-kernel corn frozen thawed
  • 1.5 cups egg substitute fat-free
  • 0.3 cup green onions sliced
  • 0.3 cup monterrey jack cheese shredded with jalapeño peppers ()
  • 0.3 teaspoon pepper 
  • 0.5 cup bell pepper red chopped
  • 0.5 cup salsa 
  • 0.1 teaspoon salt 
  • cup zucchini diced

Directions

  1. Combine first 5 ingredients in a bowl; stir well, and set aside.
  2. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  3. Add zucchini, bell pepper, and green onions; cook, stirring constantly, 5 minutes or until tender. Stir in corn.
  4. Pour egg mixture over vegetables; cover, reduce heat to medium-low, and cook 15 minutes or until set.
  5. Sprinkle cheese over frittata. Wrap handle of skillet with foil; broil 2 minutes or until cheese melts.
  6. Serve immediately.
