  • 0.8 cup bulgur uncooked (cracked wheat)
  • 0.3 cup parsley fresh finely chopped
  • tablespoons juice of lemon 
  • teaspoon olive oil 
  • 0.3 cup bell pepper sweet red finely chopped
  • 0.3 teaspoon salt 
  • cup water boiling
  • 0.7 cup zucchini finely chopped

Directions

  2. Add zucchini and next 3 ingredients to bulgur; toss well.
