  • 45 ounce beans white drained and rinsed canned (such as great northern or cannellini)
  • 0.3 teaspoon ground pepper 
  •  chipotles in adobo finely chopped
  • 0.5 cup cilantro leaves fresh chopped
  • 1.5 cups corn frozen thawed
  • tablespoon garlic clove minced
  • pound ground chicken 
  • teaspoons ground cumin 
  •  to 2 chilies slit green finely chopped (or chilies)
  • servings kosher salt 
  • servings lime 
  • cups chicken broth low sodium homemade store-bought
  • tablespoons olive oil 
  • 1.8 cups onion diced
  • 0.5 teaspoon oregano dried
  • servings tortilla chips

Directions

  1. In large saucepan or dutch oven, heat oil over medium heat until shimmering.
  2. Add onion and 1 teaspoon salt. Cook, stirring, until softened and beginning to turn golden, 6 to 8 minutes.
  3. Add jalapeños, garlic, cumin, oregano, and cayenne. Cook until fragrant, about 1 minute.
  4. Add chicken and cook until just cooked through, about 4 minutes.
  5. Add chipotle chilies, beans, and broth and bring to simmer. Simmer for about 10 to 15 minutes to let flavors meld.
  6. Add corn to just heat through. Season to taste. Stir in cilantro and serve with avocado, chips, and lime.
