  • 1.5 tsp double-acting baking powder 
  • cup cake flour 
  • tbsp eggnog light
  • tbsp granulated sugar 
  • cup heavy whipping cream

Directions

  1. Preheat oven to 350F and line muffin pan with cupcake liners.
  2. In a large bowl, combine all cupcake ingredients and mix with a whisk until batter is smooth and no lumps remain.
  3. Pour batter into cupcake liners, filling each about 2/3 full.
  4. Bake for about 18-20 minutes or until toothpick inserted comes out clean.
  5. Let cupcakes cool before frosting. To make the frosting, add whipping cream, sugar and eggnog to a bowl of a stand mixer and mix on high speed until stiff peaks form. Put frosting in piping bag to pipe.
  6. Sprinkle piped cupcakes with ground cinnamon.
