  • 0.5 teaspoon almond extract 
  • teaspoons double-acting baking powder 
  •  eggs 
  •  egg whites 
  • 1.8 cups flour all-purpose
  • 0.5 teaspoon ground allspice 
  • 0.3 cup butter softened
  • 0.7 cup prune purée 
  • 0.3 teaspoon salt 
  • 0.3 cup skim milk 
  • 0.7 cup sugar 
  • 0.5 teaspoon vanilla extract

Directions

  1. Combine the first 5 ingredients in a large bowl; beat at medium speed of a mixer for 2 minutes.
  2. Add egg whites and egg; beat 1 minute.
  3. Combine flour, baking powder, allspice, and salt; stir well.
  4. Add flour mixture to prune mixture alternately with milk, beginning and ending with flour mixture; mix well after each addition.
  5. Pour batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
  6. Bake at 350 for 1 hour or until a wooden pick inserted in center comes out clean.
  7. Let cool in pan 15 minutes on a wire rack; remove from pan, and let cool on wire rack.
