Ingredients

  • ounces angel hair pasta uncooked
  • 0.3 teaspoon pepper black
  • tablespoons capers 
  • 0.5 cup less-sodium chicken broth fat-free
  • tablespoons juice of lemon 
  • tablespoons olive oil 
  • 0.3 teaspoon salt 
  • 0.3 cup shallots finely chopped
  • 1.5 pounds shrimp deveined peeled
  • cups pkt spinach coarsely chopped

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Drain.
  3. While pasta cooks, sprinkle shrimp with salt and pepper.
  4. Heat oil in a large nonstick skillet over medium-high heat.
  5. Add shallots; saut 30 seconds.
  6. Add shrimp; saut 3 minutes.
  7. Remove shrimp mixture from pan.
  8. Add chicken broth and lemon juice to pan, scraping pan to loosen browned bits.
  9. Add cooked pasta, shrimp, spinach, and capers, and heat 1 minute or until spinach wilts, stirring frequently.
