  • tablespoon double-acting baking powder 
  • tablespoon butter 
  • tablespoons butter melted
  • large eggs lightly beaten
  • 0.5 cup flour all-purpose
  • cup apples i use 2 granny smith apples diced peeled
  • 1.5 cups milk 
  • 0.5 teaspoon salt 
  • tablespoon shortening 
  • ounces cheddar cheese shredded extra-sharp
  • 1.5 cups cornmeal yellow

  • whisk

Directions

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat until melted.
  2. Add apple, and saut 3 minutes or until just tender.
  3. Remove from heat, and set aside.
  4. Preheat oven to 42
  5. Heat shortening in a 9" cast-iron skillet in oven 5 minutes.
  6. Meanwhile, stir together cornmeal and next 3 ingredients.
  7. Whisk together milk and egg; add to dry ingredients, stirring just until moistened. Stir in 6 tablespoons melted butter.
  8. Add sauted apple and cheese, stirring just until combined.
  9. Pour batter into hot skillet.
  10. Bake at 425 for 25 minutes or until golden.
  11. Cut into wedges.
