Ingredients

  • teaspoons double-acting baking powder 
  • teaspoons baking soda 
  •  eggs 
  • cup flour all-purpose
  • cups apples i use 2 granny smith apples finely chopped
  • teaspoon ground cinnamon 
  • Dash ground nutmeg 
  • tablespoon honey 
  • teaspoons juice of lemon 
  • cups buttermilk low-fat
  • tablespoon butter melted
  • tablespoon blackstrap molasses 
  • 0.5 teaspoon salt 
  • cup flour whole-wheat

Directions

  1. Combine first 7 ingredients in a large bowl; stir well.
  2. Combine buttermilk and next 5 ingredients (buttermilk through eggs) in a small bowl; stir well.
  3. Add to flour mixture, stirring until smooth. Fold in apple.
  4. Let stand 5 minutes.
  5. Spoon about 1/4 cup batter for each pancake onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.
