Ingredients

  • 14 ounce artichoke hearts drained chopped canned
  • 0.3 cup breadcrumbs soft
  • 0.3 cup cooking wine dry white
  • 1.5 pounds mushrooms fresh
  •  garlic cloves chopped
  •  green onions chopped
  • 0.5 cup mayonnaise 
  • tablespoon olive oil 
  • 0.3 cup onion chopped
  • 0.5 cup parmesan cheese grated
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon salt 

Equipment

Directions

  1. Rinse and pat mushrooms dry.
  2. Remove stems, and chop; reserve mushroom caps.
  3. Saut mushroom stems, onion, and garlic in hot oil in a large skillet over medium heat 5 minutes or until onion is tender.
  4. Add wine, and cook 2 minutes or until liquid evaporates. Stir in breadcrumbs.
  5. Remove from heat, and let cool.
  6. Combine onion mixture, artichoke, and next 5 ingredients. Spoon 1 teaspoonful into each mushroom cap.
  7. Place on a lightly greased rack in a roasting pan.
  8. Bake at 350 for 12 to 15 minutes or until golden.
