  • 0.8 cup baby arugula loosely packed
  • 0.3 teaspoon pepper black freshly ground
  • 1.5 ounces goat cheese sliced
  • cup grape tomatoes halved
  • teaspoons olive oil divided
  • ounce pizza crust whole-wheat
  • cup onion red thinly sliced
  • 0.3 teaspoon salt 
  • 0.3 cup walnuts coarsely chopped

Directions

  1. Preheat oven to 45
  2. Toast walnuts on a baking sheet 34 minutes or until fragrant and lightly browned.
  3. Transfer immediately to a plate; let cool.
  4. Heat 1 teaspoon oil in a nonstick skillet over medium heat; add onion. Cook, stirring occasionally, 68 minutes or until onion is soft and golden.
  5. Place crust on a baking sheet coated with cooking spray. Top with walnuts, onion, and tomatoes. Season with salt and pepper; arrange goat cheese on top.
  6. Bake for 7 minutes or until crust is golden, crisp, and warmed through. Scatter arugula on top, and drizzle with remaining oil.
  7. Let cool slightly before cutting into wedges.
