Ingredients

  • cups broccoli flowerets fresh
  • tablespoons crunchy peanut butter reduced-fat
  • teaspoons ginger fresh grated peeled
  • 0.3 cup green onions sliced
  • small bell pepper red thinly sliced
  • 0.3 teaspoon pepper dried red crushed
  • 0.3 teaspoon salt 
  • ounce pasta like spaghetti 
  • tablespoons water 
  • tablespoons citrus champagne vinegar

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Add broccoli to cooking water 1 minute before pasta is done.
  3. Drain pasta and broccoli well; transfer to a large bowl, and add green onions and red bell pepper. Set aside, and cool slightly.
  4. Combine vinegar and remaining 5 ingredients; stir well.
  5. Add vinegar mixture to pasta mixture, stirring well.
  6. Serve at room temperature.
