Ingredients

  • 24  asparagus spears fresh
  • ounce cheese blue crumbled
  • 12 slices bread trimmed
  • 0.3 cup butter melted
  • ounce cream cheese softened
  • 12 slices deli ham thinly sliced
  • tablespoon chives fresh chopped
  • 12 servings garnishes: green onion curl 
  • tablespoons mayonnaise 
  • 12 servings paprika 

Equipment

  • peeler
  • steamer basket

Directions

  1. Snap off tough ends of asparagus, and remove scales from stalks with a vegetable peeler, if desired. Arrange asparagus in a steamer basket over boiling water. Cover and steam 4 to 6 minutes or until crisp-tender.
  2. Remove from steamer, and cool on paper towels.
  3. Stir together cream cheese and next 3 ingredients.
  4. Roll each bread slice with a rolling pin to flatten.
  5. Spread 1 side of each slice with 2 tablespoons cream cheese mixture; top each with 1 ham slice.
  6. Place 2 asparagus spears, tips pointed toward opposite ends, on 1 end of each bread slice; roll up, and place, seam side down, on a greased baking sheet.
  7. Brush with butter; sprinkle with paprika.
  8. Bake at 400 for 12 minutes or until golden.
  9. Serve immediately.
  10. Garnish, if desired.
  11. Note: Freeze unbaked rollups up to 1 month in an airtight container. Thaw in refrigerator, and bake as directed.
