Baby Tomato and Fresh Herb Tabbouleh

Ingredients

• 15  pepper black freshly ground
• 1 cup bulgur wheat 
• 0.5 cup flat-leaf parsley leaves finely chopped
• 0.3 cup chives fresh finely chopped
• 0.5 cup mint leaves fresh finely chopped
• 1  juice of lemon juiced
• 2 pinches kosher salt 
• 0.3 cup olive oil extra-virgin
• 1 pint baby tomatoes washed and quartered
• 1.3 cups water boiling

Equipment

• plastic wrap

Directions

1. Combine bulgur, a couple pinches of salt, and boiling water in a heat-proof bowl. Cover tightly with plastic wrap and let stand 20 minutes (check the directions on the packaging for your particular bulgur). Unwrap plastic and fluff with a fork.
2. Toss bulgur with remaining ingredients and season, to taste, with salt and pepper.
3. Serve chilled or at room temperature.
