- 2 slices bacon
- 2 teaspoons double-acting baking powder
- 0.3 teaspoon baking soda
- 1 large eggs lightly beaten
- 1.3 cups buttermilk fat-free
- 1 cup flour all-purpose
- 0.1 teaspoon ground pepper red
- 0.3 cup olive oil
- 0.8 cup onion chopped
- 0.3 teaspoon salt
- 0.5 cup sharp cheddar cheese shredded
- 0.8 cup cornmeal yellow

Directions
- Cook bacon in a skillet over medium heat.
- Remove bacon, reserving drippings in pan.
- Drain bacon; crumble. Increase heat to medium-high.
- Add onion to drippings in pan; saut 5 minutes.
- Preheat oven to 40
- Combine buttermilk, olive oil, and egg.
- Weigh or lightly spoon flour into a dry measuring cup; level with a knife.
- Combine flour and next 5 ingredients (through pepper) in a bowl, stirring well with a whisk. Make a well in center of flour mixture.
- Add milk mixture; stir just until moist.
- Stir in bacon, onion, and cheese. Spoon into 12 muffin cups coated with cooking spray.
- Bake at 400 for 13 minutes or until a wooden pick inserted in center comes out with moist crumbs clinging.
- Remove muffins from tins; cool on a wire rack.
