Ingredients

  • tablespoons brown sugar 
  • cups ham cooked chopped
  • cups catsup 
  • 20 ounce bean soup mix dried
  • 0.5 teaspoon pepper dried red crushed
  • 0.5 teaspoon salt 
  • 16 ounce ham hocks smoked
  • tablespoons spicy brown mustard 
  • large onion diced sweet
  • tablespoons vegetable oil 
  • cups water

Directions

  1. Place beans in a Dutch oven; add water 2 inches above beans, and soak 8 hours.
  2. Drain.
  3. Bring beans, 4 cups water, and ham hocks to a boil in a Dutch oven; cover, reduce heat, and simmer 1 hour or until beans are tender.
  4. Drain.
  5. Remove beans; set beans aside.
  6. Remove ham hocks, and let cool; chop meat, discarding skin and bones.
  7. Saut onion and 2 cups ham in hot oil in Dutch oven 5 minutes or until onion is tender.
  8. Add beans, reserved meat from ham hocks, ketchup, next 4 ingredients, and, if desired, bourbon to Dutch oven.
  9. Bake, covered, at 350 for 1 hour.
