Ingredients

  • tablespoons add carrot and onion to bacon fat . cook 
  •  bay leaf 
  • ounce tomato sauce canned
  • 0.3 cup flour all-purpose
  • tablespoons flour all-purpose
  • clove garlic minced
  • medium size bell pepper green chopped
  • pound calves' liver thinly sliced
  • medium onion chopped
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • ounces cheddar cheese shredded
  • cup water

  • baking pan

Directions

  1. Sprinkle liver with salt and pepper; dredge in flour. Brown liver on both sides in hot bacon drippings in a large skillet.
  2. Remove liver to a 10- x 6- x 2-inch baking dish, reserving pan drippings in skillet.
  3. Saut onion, green pepper, and garlic in pan drippings.
  4. Add flour, tomato sauce, water, and bay leaf. Bring to a boil, stirring constantly.
  5. Remove from heat; pour over liver.
  6. Bake, uncovered, at 325 for 30 minutes.
  7. Remove and discard bay leaf.
  8. Sprinkle with cheese; bake an additional 10 minutes or until cheese melts.
