  • 0.7 cup banana very ripe mashed ( 1)
  • large eggs 
  • cup flour all-purpose
  • 0.3 teaspoon ground cinnamon 
  • cup buttermilk low-fat
  • 0.5 cup maple syrup 
  • 0.1 teaspoon salt 
  • tablespoon stick margarine melted
  • tablespoon sugar

Directions

  1. Lightly spoon flour into a dry measuring cup; level with a knife.
  2. Combine flour and next 4 ingredients in a bowl.
  3. Combine egg, buttermilk, and butter; add to dry ingredients, stirring until smooth. Stir in banana.
  4. Spoon 1/4 cup batter for each pancake onto a hot griddle or skillet coated with cooking spray. Turn pancakes when tops are bubbly and edges look cooked.
  5. Serve with syrup.
