Ingredients

  • medium bananas 
  • tablespoons butter 
  • 0.5 cup coconut or flaked toasted
  • 14 ounce eagle brand® condensed milk sweetened canned
  • tablespoons cornstarch 
  • large egg yolks beaten
  • ounce graham cracker crust prepared
  • servings heavy cream 
  • servings juice of lemon 
  • teaspoon vanilla extract 
  • 1.3 cups water

Directions

  1. Dissolve cornstarch in water in heavy saucepan; stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly.
  2. Remove from heat; add butter and vanilla. Cool slightly. Fold in coconut.
  3. Slice bananas; dip in lemon juice and drain. Arrange on bottom of pie crust.
  4. Pour filling over bananas; cover.
  5. Chill 4 hours or until set. Top with whipped cream.
  6. Garnish with toasted coconut and sliced bananas, if desired.
