  • 0.8 teaspoon baking soda 
  • cup banana ripe mashed ( 2 medium)
  • 0.5 cup butter softened
  • 0.3 cup buttermilk 
  • 18 servings sprinkles 
  • 2.5 cups powdered sugar 
  •  eggs 
  • cups flour all-purpose
  • tablespoons milk 
  • 0.5 teaspoon salt 
  • 0.5 cup shortening 
  • 1.5 cups sugar 
  • teaspoon vanilla extract

Directions

  1. In a large bowl, cream shortening and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition. Beat in vanilla and bananas.
  3. Combine the flour, baking powder, baking soda and salt; add to banana mixture alternately with buttermilk, beating well after each addition.
  4. Fill 18 paper-lined muffin cups two-thirds full.
  5. Bake at 350° for 15-20 minutes or until a toothpick inserted near the center comes out clean.
  6. Remove to wire racks to cool completely.
  7. In a small bowl, cream butter and confectioners' sugar until light and fluffy; add enough milk to achieve desired spreading consistency. Frost cupcakes.
  8. Garnish with sprinkles if desired.
