  • cup skim milk fat-free (skim)
  • 0.3 cup vegetable oil 
  •  egg whites fat-free
  • cups flour all-purpose
  • tablespoon sugar 
  • teaspoons double-acting baking powder 
  • 0.5 teaspoon salt 
  • 0.1 teaspoon pepper 
  • 0.3 cup bell pepper red chopped
  • 0.3 cup spring onion chopped
  • tablespoons basil dried fresh chopped

Directions

  1. Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray, or line with paper baking cups.
  2. Beat milk, oil and egg whites in large bowl with fork. Stir in remaining ingreidents just until flour is moistened. Divide batter evenly among muffin cups.
  3. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan to wire rack.
  4. Serve warm.
