Ingredients

  • 0.3 cup bull's-eye barbecue sauce texas style
  • 0.5 lb capellini uncooked
  • 0.5 cup chicken broth fat-free reduced-sodium
  • Tbsp cilantro leaves fresh chopped
  • cloves garlic minced
  • Tbsp gingerroot minced
  •  green onions sliced
  • Tbsp juice of lime 
  • tsp nam pla (fish sauce)
  • Tbsp oil divided
  • lb pork tenderloin cut into thin strips
  • 0.3 cup planters roasted peanuts dry chopped
  • tsp sesame oil 
  • Tbsp lite soy sauce 
  • tsp sugar

Directions

  1. Mix first 6 ingredients until blended.
  2. Heat 2 tsp. oil in large skillet on medium-high heat.
  3. Add half the meat; cook 2 min. or until no longer pink, turning after 1 min.
  4. Remove from skillet; cover to keep warm. Repeat with remaining meat. Return all meat to skillet. Stir in barbecue sauce; cook and stir 1 min.
  5. Remove from skillet; cover to keep warm.
  6. Cook pasta as directed on package, omitting salt. Meanwhile, heat remaining oil in large skillet.
  7. Add onions, ginger and garlic; cook and stir 30 sec. Stir in broth mixture; bring to boil.
  8. Drain pasta.
  9. Add to broth mixture in skillet; stir to coat. Spoon into soup bowls; top with meat, nuts and cilantro.
