Ingredients

  • 0.3 cup almonds sliced
  • pound beets peeled halved
  • 0.3 teaspoon pepper black freshly ground
  • 0.3 cup couscous 
  • 0.5 teaspoon dijon mustard 
  • teaspoons juice of lemon 
  • tablespoons mint leaves 
  • tablespoons olive oil extra-virgin
  • 0.3 teaspoon salt 
  • tablespoons shallots minced
  • 0.3 cup water

Directions

  1. Wrap beets in parchment paper. Microwave at HIGH until tender (about 7 minutes).
  2. Let stand 5 minutes.
  3. Cut into 1-inch pieces.
  4. Bring water to a boil.
  5. Add couscous; cover.
  6. Remove from heat; let stand 5 minutes.
  7. Combine shallots, olive oil, lemon juice, Dijon mustard, salt, and pepper.
  8. Add beets and couscous. Top with almonds and mint.
