  •  cucumber english peeled coarsely chopped
  •  garlic cloves minced
  • 0.3 cup olive oil extra-virgin
  • 0.8 cup orange bell pepper chopped
  • cup onion red finely chopped
  • 0.3 cup red wine vinegar 
  • 0.3 teaspoon salt 
  • 1.5 pounds tomatoes coarsely chopped
  • 0.8 cup bell pepper yellow chopped

Directions

  1. Prepare grill to medium-high heat.
  2. Place bread slices on grill rack; grill 1 minute on each side or until golden brown with grill marks.
  3. Remove from grill; tear bread into 1-inch pieces.
  4. Combine tomatoes, onion, bell peppers, basil, and cucumber in a large bowl.
  5. Add bread; toss gently.
  6. Combine vinegar, black pepper, salt, and garlic in a small bowl, stirring with a whisk. Gradually add oil, stirring constantly with a whisk.
  7. Drizzle dressing over salad; toss gently to coat. Cover and chill 20 minutes before serving.
