Ingredients

  • cup cornstarch 
  • liter enough to deep-fry as needed
  • 0.3 cup fish sauce 
  • cups flour all-purpose
  • tablespoon garlic powder 
  • teaspoon ground cardamom 
  • teaspoon ground cumin 
  • teaspoon ground ginger 
  • 0.3 cup honey 
  •  jalapeno or any hot peppers) seeds removed and minced (use gloves when handling these
  • cup mango juice 
  • teaspoon chili flakes red
  • tablespoon rice wine vinegar 
  • teaspoons salt 
  • 42  shrimp deveined peeled
  • tablespoon irvine spices blackfish seasoning

Directions

  1. In a small sauce pot, combine jalapeno, mango juice, vinegar, chili flakes, and fish sauce.
  2. Let reduce and thicken over medium heat.
  3. Remove from heat and whisk in honey. Keep warm.
  4. Heat oil in deep-fryer to 375 degrees F. Shake flour, cornstarch, Blackfish Seasoning, garlic powder, cumin, cardamom, ground ginger, and salt together in a plastic bag.
  5. Add shrimp to bag in small batches and shake to coat with flour mixture. Deep-fry until golden brown.
  6. Remove to paper toweling to drain and coat with glaze. Use cocktail toothpicks to serve.
