  • 0.5 teaspoon baking soda 
  • 0.5 cup buckwheat flour

  • 1.5 cups flour all-purpose
  • 2.5 cups buttermilk low-fat
  • 72 servings dilled onion compote 
  • Dash salt 
  • ounces salmon smoked thinly sliced cut into 1/4-inch-wide strips
  • 0.5 teaspoon sugar 
  • tablespoon sugar 
  • tablespoon vegetable oil 
  • tablespoons warm water (105° to 115°)

Directions

  1. Dissolve 1/2 teaspoon sugar and yeast in warm water in a large bowl; let stand 5 minutes.
  2. Add buttermilk, oil, and egg; stir with a whisk until smooth.
  3. Combine flours, 1 tablespoon sugar, baking powder, baking soda, and salt; stir well.
  4. Add to yeast mixture; stir until smooth. Cover and chill 8 hours.
  5. Beat egg whites at high speed of a mixer until stiff peaks form. Gently fold egg whites into batter. Spoon about 1 tablespoon batter for each pancake onto a hot nonstick griddle or nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked.
  6. Divide salmon strips evenly among pancakes, and top each with about 1 teaspoon Dilled Onion Compote.
  7. Garnish with dill sprigs, if desired.
