Ingredients

  • 0.5 cup spiced apple butter 
  • 1.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • cups blueberries fresh
  • 1.5 cups brown sugar packed
  • 0.5 cup egg substitute 
  • 3.5 cups flour all-purpose
  • teaspoon ground cinnamon 
  • 0.3 teaspoon ground nutmeg 
  • 0.5 teaspoon lemon rind grated
  • 1.5 cups buttermilk low-fat
  • 0.5 cup butter chilled divided cut into small pieces and
  • 0.3 teaspoon salt 
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 35
  2. Combine first 5 ingredients in a large bowl; cut in 1/2 cup margarine with a pastry blender or 2 knives until mixture resembles coarse meal.
  3. Place 1 cup flour mixture in a small bowl; cut in 2 tablespoons margarine to form a streusel; set aside.
  4. Add baking powder and baking soda to remaining flour mixture in large bowl; stir well.
  5. Combine buttermilk, egg substitute, apple butter, vanilla, and lemon rind.
  6. Pour buttermilk mixture over flour mixture; beat at low speed of a mixer until well-blended.
  7. Pour batter into a 13 x 9-inch baking pan coated with cooking spray. Top batter with blueberries, and sprinkle with reserved streusel.
  8. Bake at 350 for 50 minutes or until a wooden pick inserted in center of cake comes out clean.
  9. Let cake cool in pan on a wire rack.
