Ingredients

  • cups beef stock 
  • tablespoon cayenne 
  • cup flour 
  • cloves garlic minced
  • tablespoon ground coriander 
  • tablespoon ground cumin 
  •  onion chopped
  • ounces vegetable oil; peanut oil preferred 
  • ounces red wine vinegar 
  • servings salt and pepper black freshly ground
  • pounds spare ribs cut into bones
  • ounces tomato purée 
  • quart veal stock

  • aluminum foil

Directions

  1. Preheat oven to 375 degrees F.
  2. Season flour with salt and pepper and dust ribs with it. Knock off any remaining flour and heat up oil. Brown ribs in oil and set aside.
  3. Saute, over low heat, the onions and garlic until translucent.
  4. Add spices and stir.
  5. Add the puree, red wine vinegar, and beef stock and bring to a simmer.
  6. Place ribs in braising pan and cover with the seasoned beef stock and veal stock. Cover with foil.
  7. Place in the oven for 2 1/2 hours or until ribs are tender.
