Ingredients

  • servings pepper black freshly ground
  •  eggs beaten
  •  biscuits frozen buttermilk or southern style
  • tablespoons oz. bacon into pieces crumbled
  • servings salsa 
  • oz cheddar cheese shredded
  • tablespoons water 

Equipment

  • bowl
  • baking sheet
  • oven

Directions

  1. Heat oven to 375F. Spray 2 (10-oz) custard cups or souffl dishes with cooking spray. In small bowl, beat eggs and water; set aside.
  2. In each cup, place 1 tablespoon bacon bits; top with 1 frozen biscuit, 2 tablespoons cheese and half of the egg mixture.
  3. Sprinkle with pepper.
  4. Place custard cups on cookie sheet with sides.
  5. Bake 24 to 27 minutes or until biscuits are golden brown.
  6. Sprinkle with remaining bacon.
  7. Serve immediately with salsa.
