Ingredients

  • cup bulgur uncooked
  • cups meat from a rotisserie chicken diced frozen thawed cooked
  • cup green onions chopped ( 8)
  • tablespoons juice of lemon 
  • teaspoon olive oil 
  • ounce pineapple tidbits in juice undrained canned
  •  bell pepper red finely chopped
  • 0.3 teaspoon salt 
  • cups water

Directions

  1. Bring water to a boil in a medium saucepan. Stir in bulgur; cover and simmer 15 minutes or until water is absorbed.
  2. Remove from heat, and fluff with a fork.
  3. While bulgar cooks, combine chicken and next 6 ingredients; if desired, add parsley and hot sauce.
  4. Add to cooked bulgur, stirring well.
