  • cup quick-cooking brown rice instant uncooked
  • 1.3 cups water 
  • tablespoons butter 
  •  bell pepper red yellow finely chopped
  • cup peas sweet frozen (from 12-oz bag)
  • tablespoons spring onion thinly sliced
  • 0.3 cup parmesan cheese grated
  • serving salt and pepper freshly ground to taste
