Ingredients

  • slices bacon chopped
  • 12 ounces sourdough bread cubes toasted
  • cups butternut squash diced peeled
  • 1.5 cups chicken stock see unsalted
  •  eggs 
  • 0.3 teaspoon kosher salt 
  • tablespoons olive oil 
  • cup onion chopped
  • 0.3 teaspoon pepper 
  • tablespoons sage chopped

Directions

  1. Combine chicken stock and eggs.
  2. Add toasted sourdough bread cubes.
  3. Combine squash, olive oil, kosher salt, and pepper on a baking sheet.
  4. Bake at 400 for 15 minutes. Reduce heat to 35
  5. Cook chopped bacon over medium heat until crisp; remove from pan.
  6. Add onion to drippings; saut until tender. Stir squash, onion, bacon, and sage into bread mixture.
  7. Bake stuffing at 350 for 45 minutes in an 11 x 7-inch baking dish coated with cooking spray.
