  • tablespoons baking cocoa 
  • 2.5 tablespoons double-acting baking powder 
  • 0.5 cup butter melted
  • 12 servings chocolate chips 
  •  eggs beaten
  • cups flour all-purpose
  • tablespoons coffee granules instant
  • cup milk 
  • 0.5 teaspoon salt 
  • 0.8 cup semi-sweet mini
  • 0.8 cup sugar 
  • teaspoon vanilla extract

Directions

  1. Combine first 5 ingredients in a large bowl; set aside.
  2. Mix together milk, coffee and egg; stir into flour mixture. Stir in butter and vanilla; mix well. Stir in chocolate chips.
  3. Spoon batter into paper-lined or greased muffin cups, filling 2/3 full.
  4. Bake at 375 degrees for 17 to 20 minutes, until a toothpick tests clean.
