  • 0.1 teaspoon ground pepper red
  • 1.3 cups milk 1% low-fat
  • 0.8 cup lower-sodium chicken broth fat-free
  • cup onion chopped
  • pound potatoes red chopped
  • ounces sharp cheddar cheese shredded reduced-fat
  • 0.5 cup water

Directions

  1. Melt butter in a medium saucepan over medium-high heat.
  2. Add onion to pan; saut 5 minutes or until onion is tender.
  3. Sprinkle with flour; cook 1 minute, stirring onion mixture constantly.
  4. Add potato, milk, broth, and 1/2 cup water to pan; bring to a boil. Cover, reduce heat, and simmer 10 minutes.
  5. Add 1/2 cup reduced-fat sharp cheddar cheese and ground red pepper; cook 2 minutes or until cheese melts, stirring frequently. Top each serving evenly with 1 1/2 teaspoons chopped green onions.
