  • 0.8 cup heavy cream 
  • pinch salt 
  • 0.3 cup sugar plus more for the baking dish
  • teaspoon vanilla extract 
  • servings whipped cream for serving

Directions

  1. Make the batter: Sift the flour, sugar, and salt into a bowl. In a separate bowl, whisk the eggs and heavy cream until well blended.
  2. Add the egg mixture to the flour mixture and whisk until smooth.Preheat the oven to 350 degrees F. Grease an oval oven-proof dish or individual dishes, with the butter.
  3. Sprinkle the bottom and sides with sugar.
  4. Place the cherries in the oven-proof dish.
  5. Pour the batter over the cherries and place in the oven.
  6. Bake for 30 to 40 minutes or until the custard is firm.
  7. Remove from the oven and cool for 5 minutes before serving.
  8. Serve the clafoutis warm with a scoop of ice cream.
