Ingredients

  • tablespoons apricot preserves 
  • cups panko bread crumbs (panko)
  •  strips. boneless skinless cubed
  •  eggs beaten
  • cups flour all-purpose
  • box eggo homestyle waffles toasted
  • tablespoons sea salt 
  • tablespoons ground cumin 
  • tablespoons pepper black
  • 0.5 cup honey 
  • tablespoons horseradish 
  • servings hot sauce such as sriracha, for garnish
  • 1.5 cups maple syrup 
  • tablespoons onion powder 
  • servings parsley for garnish
  • tablespoons salt 
  • tablespoons paprika smoked
  • servings vegetable oil for frying
  • tablespoons coarse mustard whole

Directions

  1. Preheat the oven to 300 degrees F.
  2. Heat the vegetable oil in a pot to 350 degrees F.
  3. Sprinkle the chicken with the garlic, smoked paprika, cumin, onion powder, salt and pepper. Dredge the chicken in the flour, then the eggs and lastly the breadcrumbs. Working in batches, fry the chicken until golden brown, about 5 minutes. As they finish, place on a cookie sheet in the oven to keep warm.
  4. For the syrup, mix together the maple syrup, horseradish, apricot preserves, mustard and honey.
  5. To serve, drizzle syrup generously on a waffle half.
  6. Place a few chicken bites on top.
  7. Drizzle with more syrup and garnish with a touch of the hot sauce and a parsley leaf.
