  • 12  bibb lettuce leaves 
  • cups chicken breast cooked chopped
  • 0.3 cup couscous uncooked
  • cup cucumber chopped
  • tablespoon olive oil extravirgin
  • 0.5 cup mint leaves fresh chopped
  • 0.3 cup parsley fresh chopped
  • tablespoons juice of lemon fresh
  • teaspoons oregano fresh chopped
  • 0.5 cup onion red finely chopped
  • 0.5 teaspoon salt 
  • 0.5 cup water

Directions

  1. Bring 1/2 cup water to a boil in a small saucepan; stir in couscous.
  2. Remove from heat, cover, and let stand 5 minutes. Fluff with a fork.
  3. Place couscous in a fine-mesh strainer; rinse with cold water.
  4. Drain.
  5. Combine couscous, chicken, and next 6 ingredients (through oregano) in a medium bowl. Stir in oil and salt.
  6. Place 3 lettuce leaves on each of 4 plates; spoon about 1/4 cup chicken mixture in the center of each leaf.
