  • pound baking hen 
  • cup celery chopped
  • servings rice hot cooked
  • 0.3 cup parsley fresh chopped
  • medium size bell pepper green chopped
  • cups okra sliced
  • large onions chopped
  • 0.5 teaspoon pepper 
  • tablespoon salt 
  • 0.5 cup salt pork drippings 
  • medium tomatoes peeled quartered
  • quarts water

Directions

  1. Brown chicken in drippings in a large Dutch oven.
  2. Remove chicken, and set aside. Reserve drippings in Dutch oven.
  3. Add onion, green pepper, okra, celery, and parsley to Dutch oven; cook over low heat 30 minutes, stirring frequently. Return chicken to Dutch oven.
  4. Add water, tomatoes, salt, and pepper, stirring well. Simmer, uncovered, 2 1/2 hours or until chicken is tender.
  5. Remove chicken from gumbo; bone and chop meat. Return meat to gumbo, stirring well. Cook until thoroughly heated.
  6. Serve gumbo over rice.
  7. Add a small amount of fil powder to each serving, if desired.
