Ingredients

  • teaspoons brown sugar 
  • cup cabbage shredded finely
  • cup meat from a rotisserie chicken diced cooked
  • tablespoons cilantro leaves fresh diced
  •  green onions diced
  • tablespoon hoisin sauce 
  • 36 servings vegetable oil; peanut oil preferred 
  • 36 servings peanut dipping sauce 
  • teaspoon sesame oil 
  • 36  wonton wrappers 

Equipment

  • dutch oven

Directions

  1. Stir together first 7 ingredients. Spoon 1 teaspoon mixture in center of each wonton wrapper. Moisten wonton edges with water. Bring corners together, pressing to seal.
  2. Pour oil to a depth of 3 inches into a Dutch oven; heat to 37
  3. Fry wontons in batches until golden, turning once.
  4. Drain on wire racks over paper towels.
  5. Serve immediately with Peanut Dipping Sauce.
