  • 1.5 tablespoons chipotle chiles in adobo sauce canned chopped
  •  bacon crumbled cooked
  • large eggs lightly beaten
  • 1.3 cups buttermilk fat-free
  • cup flour all-purpose
  • 0.5 teaspoon ground cumin 
  • teaspoon salt 
  • tablespoons sugar 
  • 0.8 cup cornmeal yellow

Directions

  1. Preheat oven to 42
  2. Combine first 7 ingredients in a large bowl, stirring well.
  3. Combine buttermilk, butter, chiles, and egg in a medium bowl, stirring with a whisk.
  4. Add buttermilk mixture to flour mixture; stir just until moist. Fold in bacon.
  5. Pour batter into an 8-inch square baking pan coated with cooking spray.
  6. Bake at 425 for 18 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack.
